Honduras is a fine example of some of the best, high grown specialty grade arabica coffee in the Americas. We find its sweet spot to be in the medium to light range, where it yields a balanced, and complex cup with a good body and notes of tropical fruit, caramel and black pepper. We associate its brightness with the best of the clean, Central American cups, but also note a deep, Oaxacan-like sweetness.

BLUE MONK

Blue Monk is loaded with wild berries, sweet-floral notes, blueberry, strawberry, raspberry, a cocoa body, and hints of tobacco and cedar on the finish. Even the unroasted green coffee has an intense, fruity-sweet aroma!

Dry processed coffees have more body than wet-process or washed coffees due to the affect of the imparted fruit mucilage. Fruit notes and bright accents from the dried cherries add their own characteristics to the final cup.
